Meal plan for the week of Aug. 10
I’ve been keeping a list of my weekly menus in a Google Document for me to keep track of meals, recipes and other notes. It’s helpful for when I want to remember what we had a few weeks prior, so that I don’t repeat too many recipes too often. Also, it’s useful for coming up with new ideas.
This week, we’ll have:
- Black bean burgers
- Black bean enchiladas and rice
- Frozen pizza, side salad
- Balsamic chicken and spinach and couscous (saw this recipe linked on Karen’s blog. Do you read her? You should. She’s brilliant)
- Grilled cheese sandwiches and veggie barley soup
- Pinto beans, cornbread, vegetable
We had the black bean burgers tonight, served on buns from the bakery. Oh my word, these burgers are delicious! I thought they would be just OK, but nope — delicious. My husband loved them and wants me to make them again soon. They’re easy to make, cheap, and pretty healthy!
Next time, I’ll make a huge batch and freeze some for later.
I paid a visit to the bulk bin section and picked up some things to make some granola. I also plan on trying to make some homemade jelly this week. Oh, an experimental cook, I am.

Linda, there’s only one way to find out! I guess you could try using your favorite bean to see what happens. Maybe pinto? I dunno.
