A frozen food accident

Don’t you just love happy food accidents?

About a week or so ago, I was making a pina colada dipping sauce to go with some coconut shrimp. I made a bit too much, and put the leftovers in a small container and stuck it in the freezer.

Last night, I was craving a snack, but nothing in the pantry or fridge sounded good.

I opened the freezer, spied the little container, and thought I’d try some.

My pina colada sauce hadn’t frozen solid; rather, it was mostly frozen similar to frozen yogurt or an Italian ice. Woo hoo! Super delicious.

The concoction was a bit of chopped pineapple and juice, some pina colada drink mix, and some sour cream. I wish I remembered how much of each ingredient I included so I can try to duplicate it.

The lesson I learned: Save all possible yummy food leftovers! Things can be repurposed, or turn into something extra-delicious.

I love leftovers! I had green beans left over from Saturday today for lunch…I love it!
