Menu for the week of Jan. 14-18

Last week, when I posted the receipt for my grocery shopping trip, a couple of you were interested in how I’d turn that into a menu.

However, my plans are changing a bit. My husband just found out that he’s going on a business trip this week, so he won’t be home for dinner on Wednesday night and probably not for Thursday night as well. So, I’ll adjust my menu a bit.

I’ll add the groceries to things I already have on hand, and I’ll make:

Monday:

Chicken rice casserole

I’ll add chopped celery and omit the onion mix, using my own spices instead. $6

Tuesday:

Southwestern salad-

This is a new recipe from a cookbook a friend gave to me for Christmas. It includes ground beef, a can of chopped tomatoes, chickpeas, kidney beans, black beans, corn, green peppers, fresh spinach, and a southwestern dressing.

I might or might not make it the way the recipe says, but it will cost the same:  $11.31 for all of the ingredients (not just the part I’ll use). This will make a ton of food, and will be several servings.

Wednesday*:

Steamed fish, macaroni salad, twice-baked potato * Was going to prepare it this week, but everything can wait. I’m putting this on hold.

I’ll eat Tuesday’s leftover’s.

Thursday:

Tacos made with the meat mixture in the southwestern salad, or eating it as a salad again..89 for the package of tortillas.

Friday:

Split pea soup

I love it. Make it quite a bit. Costs $2.62 a pot.

Total for the week: $20.82 

Breakfasts will be baked oatmeal, regular oatmeal, cold cereal.

Lunches will be dinner leftovers, sandwiches, fruit, and other simple things.
